The first bonito of the season is prepared in a carpaccio style salad.
Served with a spring-inspired sauce of lightly flavoured turnips and fragrant horseradish, and special salted kelp butter.
Soy Milk Soup With Onions, Clam Duxelle, Root celery, Potato Chips
Fresh onions, slowly sautéed until sweet, are finished in a soy milk soup base.
Savor the flavour of dried shiitake mushrooms and vegetables with a change of texture with the potato chips.
This dish can also be served as a vegan menu item by removing the clam duxelles.
