Anburrata and Matcha Shaved Ice
The new Japanese-Western fusion dessert “Anburrata” was created by combining carefully selected bean paste from the sister brand "Sorairo" of the long-established Japanese confectionery store “Kuya", with rich burrata cheese from the fresh cheese specialty store “FRESH CHEESE STUDIO.”
We have prepared a special summer only shaved ice that maximizes the charm of this dessert.
Inside the matcha granita, we carefully layer matcha ice cream, vanilla ice cream, Hokkaido-produced whipped cream, mochi balls, and sweet azuki beans from Ginza. Then generously topped with the smooth and milky “Anburrata.” The gentle sweetness and the richness of the cheese harmonize perfectly in your mouth, offering a deep and complex flavor. By adding the accompanying “extra matcha,” a refreshing bitterness is added, transforming the flavor into something reminiscent of Uji kinako. This dish offers a variety of flavors in one serving, making it the perfect summer treat.
