Marinated duck breast, Poireau, orange gastrique, chocolate crumble
The duck is carefully prepped and served with a mascarpone mousse,For lunch, the dish is served with pain d'épices, a spice originating in France, and an orange glaze.For dinner, a chocolate crumble is added for texture.
Tanzawa Atsugi, Kanagawa Peach Tea Pork
This dish is made with Momocha pork from Kanagawa Prefecture, and for lunch it is served with apples and mushrooms for a lighter fare. For dinner, clam juice, lentil sauce, butternut and seasonal vegetables are combined to create a hearty autumnal dish.
Swordfish
Swordfish is a favorite this season, garnished with turnips and seasoned with salami paste and butter sauce.
Mussels are arranged on top of risotto and served in a Turkish style.
